Whether you are looking for a recipe for a family meal or for entertaining, you can’t go wrong with Beef Stroganoff. It is an easy, yet delectable dish that always has a lovely presentation.
According to many sources, a mid-1800s Russian cookbook printed the first known recipe for Beef Stroganoff. (The name “Stroganoff” is after a Russian diploma although, depending on the source, there is some confusion regarding the exact one.) As with all recipes, it has morphed over the years to become the dish we know today. Its popularity can be measured by the fact that there’s a website in its honor.
Beef Stroganoff Recipe
Ingredients for Beef Stroganoff:
- 1 ½ pounds beef stew meat, cut into small bite-sized pieces
- ½ tsp. allspice
- ½ tsp. salt
- ½ tsp. pepper
- 1 tsp. garlic powder
- 1/3 cup butter
- 1 medium onion, chopped
- 1 ½ cups fresh mushrooms, cleaned and sliced
- ¾ cup beef broth
- 2 small bay leaves
- 2 tsp. Worcestershire sauce
- 2 tablespoons flour
- 1 8-ounce carton sour cream (use light or fat-free sour cream if looking to reduce calories)
- 4 ½ cups dry noodles
Directions for Beef Stroganoff:
Season the meat with the salt, pepper, allspice, and garlic. (This can be easily done by putting the spices in a plastic bag and shaking them so they are well-combined. Then add the meat pieces and shake well, so that all surfaces are covered with the spices.)
In a large skillet over medium-high heat, melt the butter. Add the meat and onions. Cook and stir until the meat is browned on all sides.
Add the mushrooms, beef broth, day leaves, and Worcestershire sauce to the skillet. Bring to a boil. Reduce heat, cover, and simmer for 1 ½ hours or until the meat is tender. After cooking, remove the bay leaves and discard.
In a small bowl, stir together the flour and sour cream (this will prevent the sour cream from curdling when it is heated). Add the sour cream mixture to the meat mixture in the skillet. Cook and stir over medium heat until the sauce is thickened and bubbly. Cook and stir for 1 minute more.
Cook the noodles according to package directions. Serve the Beef Stroganoff over the hot, cooked noodles.
