After a long day’s work, the thought of having to fix dinner may be unappetizing at best. Take a little help from the grocery store by using a fresh rotisserie chicken and canned enchilada sauce.
To personalize these enchiladas, use any favorite cheese and garnishes. Also try using corn tortillas instead of flour. To prevent corn tortillas from breaking without frying them, place between a couple of layers of paper towels and sprinkle with a little water. Microwave for 20-25 seconds until tortillas are soft and pliable.

Easy Chicken Enchiladas
- 1 rotisserie chicken, skinned and shredded
- 1 (8 oz.) package cream cheese, softened
- 2 cups shredded Monterey Jack or Colby Jack
- 2 cups of favorite salsa, homemade or jarred
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 8 large flour tortillas
- 3 cans mild enchilada sauce
- Chopped Roma tomato
- Chopped red onion
- Sliced avocado
- Sour cream
Preheat oven to 350. Lightly grease a 13×9 inch pan with cooking spray
Pull the chicken off bone and mix together with cream cheese, 1 cup of Monterey Jack Cheese, and 1 cup of salsa.
Heat a small skillet over medium heat; add olive oil. Sauté the onion until translucent, about 2-3 minutes. Add the garlic and continue cooking for another minute or until fragrant. Add the onion and garlic to the chicken mixture.
Place a heaping tablespoon of chicken mixture on the bottom third of the tortilla and roll up. Place, seam side down in prepared baking dish.
In a small bowl, combine the rest of the salsa with the enchilada sauce. Spoon the sauce over the tortillas. Cover with foil and bake for 35-40 minutes or until bubbly. Remove foil and sprinkle with remaining cheese. Return to oven for 5-10 minutes or until cheese melts. Serve with desired garnishes.

The third annual Broken Arrow farmers’ market closes for the season on October 15. Be sure to come out and show support for local farmers and other vendors before it’s over. The market is on Saturdays only from 8 a.m. – 12 p.m. and is located in the beautiful outdoor pavilion at 418 South Main in downtown Broken Arrow.
