I know, I know, it’s fall now, but let’s just pretend for one more Friday that we’re slathering on sunblock, hiking all day in the Snowies, and relaxing tonight on the patio with a tropical drink! I may be bringing this one back out in December…
2 oz. white rum
¾ oz. Grand Marnier
¾ oz. lime juice
¾ oz. pineapple juice
½ oz. coconut cream (skimmed from the top of a can of coconut milk)
½ jalapeno, seeds and vein removed
Place the jalapeno and Grand Marnier in a cocktail shaker and muddle with a wooden spoon. Add the rest of the ingredients and shake liberally with ice. Strain into a chilled glass.
