Joseph Sue saw that there weren’t many Korean gourmet food trucks around and wanted to stake a claim. In 2010, he opened the Calbi Truck serving healthy Korean fusion food. Unlike his Mexican counterparts, Joe’s taco, burritos, and quesadillas contain no rice nor beans, but are stuffed with fresh meats and vegetables instead. Joe is very customer-oriented and doesn’t like to see the customer wait very long (I know I certainly don’t). You get your order in, your order is up a few minutes later, and you’re on your way. Calbi customers are happy customers!
The beef taco is served with chopped romaine, shredded radish and cheese. The beef was perfectly marinated with a sweet calbi rib flavor until tender. The lettuce and radish were refreshing with a touch of rice wine vinegar and sesame. The flavor combination was outstanding. Thumbs up, way up!
The spicy pork taco is served up the same way as above. It was awesome! Its sauce was sweet and spicy and added a great twist to your typical “puerco” taco. To my ohana, it reminds me of a manapua with crispy veggies. The pork is very similar to char siu with a sweet & savory flavor. The tortillas are like the bao. Thumbs up, way up!
The shrimp taco is served up the same way as above, but was a little disappointing. The shrimp was cooked perfectly but was a little lacking in the flavor department. The sauce added a little flavor, but not much.
The chicken taco is served up the same way as above. It’s a healthy chicken taco. The chicken is perfectly cooked, but just tastes like the run-of-the-mill chicken.
The Kimchee Quesadilla? Sounds weird, right? But, it tastes so good! The Kimchee is a little spicy so imagine it like pickled jalapenos. The melted cheese adds a creaminess and complex flavor component. The spicy, sour flavor balances out with the creamy, gooey cheese. It’s out-of-this-world! The dipping sauce is sweet with a slight spice to it. Thumbs up, way up!
