This sweet recipe makes approximately a 1/2 sheet cake or more. This cake with my easy substitutions happened to be a really big hit for my daughters birthday party about three or four years ago. This recipe transforms box cake into a sheet cake in a delicous snap!
The following tip is not in the recipe below, but, I made this wonderful recipe into a tres leche cake(3 milk cake–it has three different kinds of milk poured on top of it) by poking many small slits on the top of the cooled cake and pouring a milk mixture on top. The trick is to not use too much milk as in some tres leche cakes. Take a medium sized bowl and pour into it a 1/2 cup of sweetened condensed milk, 1/2 cup of evaporated milk, and 1/2 cup of regular milk. Mix together. Make small holes on top of cooled cake and pour milk mixture all over top of cake. In the past, I’ve had some bad tres leche cakes and some good ones. I believe adding too much milk will take away from the taste of the cake and make it too soggy. Tres leche cake is usually topped with a whipped topping and fruit (in this case..strawberries). I knew we would be outdoors so I believe I used some sort of frosting (sorry don’t remember)with fruit instead of whipped topping.
STRAWBERRY CAKE INSTRUCTIONS:
3 boxes strawberry cake mix( Duncan Times Most Deluxe “strawberry surpreme”
9 eggs beaten( 3 eggs per box)
1/2 c ( unsweetened/sweetened) strawberry juice or strained puree
1/2 c + 1/3 c milk
2 c water
2-3 tbl vanilla
1 stick + 2 tbl butter
1/3 c + 2 tbl oil
I mixed each box separately BUT you don’t have to. I used milk for first box, and water for the others. The same with the oil..I used butter for first box and oil for the rest. My recipe is just a guide of yummy substitutions so if uncertain, please follow recipe on back of each cake box for specific measurements. If batter is too dry, pour up to 1/2 c water slowly and as needed. Follow box for bake times and temperature. Bake at least 35 minutes and use the toothpick test to check for doneness. The toothpick test: Take a toothpick and insert it gently into center of cake. If toothpick comes out clean it’s done. Fake a rich homemade semi-whipped icing by mixing strawberry frosting with whipped cream to desired thickness. I didn’t use this faux icing but I’m guessing half icing and half whipped cream may do the trick. I would use homemade unsweetened whipped cream because the frosting is so sweet already. For garnish add a few whole or sliced strawberries for decoration. Now you don’t have to, but, the strawberries I use for garnish are sweetened. This recipe is an old one(not so easy reading my worn out recipe card in my cabinet :) ) so let me know how it turns out. If you stick by the main recipe on the boxes, and just use my deviations as a guide everything will turn out marvelous! Other Ideas: You could make a real whipped icing or just use the best strawberry icing you can buy. Any butter cream, whipped topping, whipped icing or strawberry icing or strawberry cream cheese icing will do. Use sure to use appropriate pan for sheet cake and grease anad flour pan before pouring batter in.
